How We Make Our Cocktail Syrups (and How You Can Too)

Every Great Cocktail Starts With a Good Syrup

Walk into our new home on Sterling Road and the first thing you'll notice is the smell: citrus peel, warm spice, sugar on the stove. Every Love of Cocktails syrup is made here by hand, and the basics are easier than you'd think.

The two ratios that matter

  • Simple syrup (1:1): equal parts sugar and hot water by volume. Use it in sours and highballs. Keeps about two weeks in the fridge.
  • Rich syrup (2:1): two parts sugar to one part water. Silkier texture, less dilution, and it lasts longer. Our pick for stirred drinks like an Old Fashioned.

Flavour it three ways

  1. Steep: add ginger, cinnamon or cloves while it simmers, then strain.
  2. Infuse cold: drop in fresh herbs once it cools so they stay bright.
  3. Swap the sugar: maple, demerara or honey each change the drink's whole personality.

Our one rule: taste as you go. A syrup that's too sweet on its own is usually right once it meets citrus and spirit.

Come see where it happens

If you'd like to watch it up close, our open classes now run in this same room at 163 Sterling Road. Next up: Nov 12 (Back to Basics: Fall Classics) and Nov 19 (Tequila Lover's Class). 🍸
