We LOVE a good summer wrap up cocktail. Especially a good Gin Rickey—typically spirit, citrus, and soda. With some vegetal notes and mild sweetness, the peas pair well with gin that is heavy on evergreen botanicals. Time to give this underrated vegetable some hype!
3 sugar snap peas (2 peas cut into pieces, 1 pea for garnish)
1 oz St. George Terroir Gin
1/4 oz Green Chartreuse
1/2 oz lime juice
1 bar spoon (1/2 Tbsp) Easy Rich Syrup
2 oz sparkling water
1 In a cocktail shaker, smash and muddle the chopped snap peas until broken down, then add gin, Chartreuse, lime juice, and syrup.
2 Add enough ice to cover the liquid in the shaker, plus a bit more.
3 Cover and shake vigorously for 10–15 seconds.
4 Strain through a fine cone strainer into a 10-oz Collins glass
and fill with ice.
5 Add sparkling water and stir with a bar spoon. 6 Garnish with the whole sugar snap pea.
