Cucumber Lime Cordial

Cucumber Lime Cordial

Chop, blend, strain, blend and bottle! Easy three ingredient recipe for one of my favourite mixers - perfect with just a soda, tonic, or your favourite white spirit!

Ingredients: 

275 ml Cucumber Juice (from cucumber scraps/ approximately 1  large cucumber)

75 ml Fresh Lime Juice (from approx. 5 limes, keep zests) 

350 g White Sugar

Yield: About 600ml 

Tools: Blender, Cheese Cloth, Large Fine Strainer, Medium Bowl, Mason Jar 

Instructions

  1. Zest whole limes into white sugar in a medium bowl, mix well and set aside for 15 minutes. Cut whole limes in half and juice,  Take 2 medium cucumbers and cut them into bite sized pieces (seeds included, plus any leftover pulp you have from our Miso Cucumber Salad Recipe

  2. Juice cucumbers and set juice aside. Take any leftover pulp and transfer to 2 layer cheese cloth. Twist the ends of the cheesecloth together and squeeze our any access juice. (If you don't have a juicer, place cucumber bits and pulp into blender, add about 60ml water and blend on low setting until pulp is fine.)

  3. Transfer prepared juice into a blender,  add in lime juice, sugar and lime zest. Cover blender and blend on low-medium setting until sugar is dissolved (about 3 minutes).

  4. Strain blended cordial through a fine sieve into a a non reactive, tempered container (I used an old sauce bottle) and refrigerate.  Good for 2-3 weeks in fridge and 2 months in freezer.  

Cucumber Collins 

Ingredients:

45ml Cucumber Lime Cordial 

150ml Soda

3 Cucumber Slices for garnish

For a delicious , no-fuss non alcoholic beverage:

  1.  Combine 45ml Cucumber Lime Cordial in a tall collins glass

  2. Add ice, add soda and stir for a few seconds until integrated

  3. Garnish with a few slices of cucumbers
